Carrots contain carotenoids, which give the carrot its distinct orange color. Carotenoids fall under a classification of nutrients called phytonutrients. Phytonutrients have been shown to be strong antioxidants, which help reduce cell damage. The specific phytonutrient found in carrots called beta-carotene has been shown to reduce insulin resistance, therefore showing an increased ability to use carbohydrates. Furthermore, beta-carotene has been shown to decrease body fat through decreasing insulin resistance.
